Pathetically, I've never read/seen almost everything on your list. Except Fruits Basket which I've even read ahead (I buy the books but they are too slow so I read the scans, too.) - I think you'll not quite hate Akito so much by the end.
I never got to finish Fushigi Yugi but I looked up spoilers to find out how the story ends - it's on my list to finish eventually. I loved Kenshin - if he (or any of my favorite characters) had died I would have freaked.
Same with Mars - although, I think, if I hadn't previously read the manga - the drama would have had me very worried at the end.
I guess I'm a big chicken who mainly sticks to safe shoujo (W Juliet, Hana Kimi, Love Hina, Ouran Host Club). I have read/seen all of those & loved them.
Oh! I know one to add to your list - Takoto from Full Moon. Except he's a shinigami so the worry was never him dying but turning into a ghost. And maybe Zero in Vampire Knight? (Talk about a walking ball of angst!)
