I keep getting told that at some point, we grow to love Akito, but I don't know how.
Finished the manga, never grew to love Akito.

One reason that I like Fruits Basket is how it evolves. It goes from being light and fluffy to dark (but in a gradual, realistic way). I also like how the characters change (both physically and emotionally).
