I...assume we read different books?  Because regardless of what actually happens, I'm pretty sure neither version of Stefan or Elena wants her to be a vampire.  Actually, I can't think of any LJS heroines who started human and actually wanted to be vampires for any reason but impending death.  As in "Oh yes, you are 17 and will die of cancer in a few weeks."  And she had to be talked into it, at that.

There is also a TV!fandom opinion that Stefan and Elena will become suicidal if the other dies.  I'll assume that these people are terribly confused and think "Vampire Diaries" is another name that "Twilight" goes by.
