I love me some Last Exile and I've even gone so far as to write Big O fanfic, but I'm going to have to give the nod to The Gokusen. Really, it's its own special brand of crack. Though I have to admit the manga is just a wee bit crackier. (The live action show also seems to be completely different and yet, still crack. I haven't seen that one though.)

I've seen some of Gun X Sword, it's alright. I liked Last Exile. I won't lie, the ending left something to be desired (just because they have to rush it all in at the end due to the detail of the other episodes) but it's a nice ride.

Voting for Last Exile as it was rather amusingly steampunky, one of the airship captains is a dramatic angstmuffin, and there's a bit of Mustang/Hawkeye vibe between him and his first officer.

Gunlock...how far have you read in the manga? It's not particularly spoilery; there are a LOT of non-manga filler episodes this time around, when it does bother to stick to the manga continuity it kind of sort of follows up to the very beginning of the stuff with Hazel...and then it goes waaaaaaaaaay off into left field. Hazel and Gato here, compared to in the manga, are vastly less interesting (I particularly hate hate hate what the anime did with Gat, who is my favorite woobie undead anime Indian...ok, so he's the only one, details details!). The animation is also just painfully inconsistent -- yes, even more so than the two previous series. When it's good, it's not much better than mediocre, and when it's bad, it's downright HORRIBLE. I'd really only recommend it if you're a desperate Saiyuki completist, or you feel like mocking cheesy filler scripts and sloppy art.

I voted for Blue Seed since it's such an overlooked little gem of a series (yay for likable female characters!) but Last Exile is my second choice (angst, more angst, and really neat airplanes - too bad the ending kind of falls apart). Big O and Gokusen are also good choices, you really can't go wrong with most of your choices! But DON'T watch the Gunlock anime, noooooooo!!! It's terrible. I like Hazel, and the anime pretty much sucks all of the personality and devious intelligence from him and turns him into a ridiculous cartoon villain. And Gat is even worse. I only watch Saiyuki for the Japanese voice actors... x__x; And Kougaiji filler. (I met his voice actor IRL, and he was adorable despite having that strange Japanese affection for ugly plaid outfits... so now whenever I think of Kougaiji, I imagine him in plaid...).

Last Exile is awfully pretty, but I'm putting a vote in for the first season of Big O. Batman meets James Bond with a giant robot and a remarkable number of Isaac Asimov references. It is cracktastically awesome and has two great female characters to boot.

I voted for Blue Seed. It's one of those series which moves along in a seemingly cliched manner, only to end up in a very interesting place, and you realize at that point that that's where it was always headed.

Last Exile starts out fantastic, then slowly and progressively falls apart until it concludes with an incoherent whimper.

Big O has an intriguing premise which goes nowhere.

Saiyuki Gunlock is apparently hilariously bad.

I haven't seen the others.

I had to throw in a vote of Gunlock, simply because of the horror of it, which is why I like it (Masochist, me? Nah!). Some of the filler episodes crack me up though.
